Recycling, Part Two.

Southerners sure have a way with leftovers.


Following the Lee Brothers’ suggestion to repurpose their oxtail as a brunch dish, I added potatoes to make a hash and topped it with a fried egg. Being a firm believer in the breakfast-for-dinner phenomenon, I then completely disregarded the “brunch” part and served it in the evening instead. It was more soup-like than I’d hoped (fully the fault of my inability to follow directions), but warm and satisfying nonetheless.
